2012 ‘Due Papaveri’ Cooking Course Calendar
Join us in “Carlotta’s Cucina” and learn to cook with local and world renowned ingredients from Emilia- Romagna. Carlotta will inspire you to create a selection of dishes prepared with the freshest local ingredients and specialties. Each class has a unique theme or ingredient. In the morning, before the cooking class begins, guests visit artisanal production facilities showcasing the special ingredient of the day. The tours provide an introduction to time tested methods of cheese, wine, and vinegar making in Italy. Guests are encouraged to ask questions, taste products and gain a deeper appreciation for artisanal production of foods steeped in tradition. We host no more than 8 guests to our week-long cooking classes offered in Spring and Autumn.

Program
Monday: We’ll meet at the arrival entrance at the Bologna Airport and embark on our safari through a region bursting with fruit cultivation. Upon arrival at Due Papaveri, you will have time to settle in, tour the estate and enjoy an Aperitivo together. 4-course Dinner (7pm) at Due Papaveri.Tuesday: If you are keen, enjoy an inspiring sunrise on our panorama terrace. Breakfast (9am). Today we’ll take an excursion to the medieval town of Vignola, and its enchanting fortress. Climb up the steps to the top of the watchtower and gaze over the tiled roofs to the surrounding cherry cultivations. A few steps away from the castle we’ll stop for lunch, feast on Bolognese classics made with love by two colourful sisters who’ve been running the restaurant for 45 years. In the afternoon we’ll stroll through Castelvetro, a charming hilltop village surrounded by Lambrusco vineyards. 4-course dinner (7pm) at Due Papaveri. Relish the stars and fresh air of the countryside.
Wednesday: After breakfast (9a.m.) feel free to go for a swim, stroll, or check out our wine-cellar and the vinegar room were we produce our own aceto balsamico. For lunch (12pm) it’s “make your own pizza” and you’ll share in each other’s tasty creations. After pizza comes the pasta-making class (4pm). And later for dinner (8pm) you’ll get to enjoy the fruits of your labour.
Thursday: wake up to the church bells from nearby Benedello. Breakfast (9am). Off we go for a tour of our Aceto Balsamico producers’ roof-top production. We’ll enjoy a lunch (12:30 pm) in Modena’s piazza Grand. In the afternoon you’re free to explore any of Modena’s attractions (food market, Duomo, exclusive boutiques). Then were off to Maranello, to discover the allure of Ferrari at the Ferrari museum. 4-course Dinner at Due Papaveri (8pm).
Friday: Breakfast(9am). Today we’ll be exploring the picturesque wine region Colli Bolognesi (10am. You’ll visit two wineries that produce quality wines, taste an array of wines, see their cantinas and estates and chat with the vintners. Then off to a friendly trattoria in Monteveglio for lunch. We will be home late afternoon to relax before dinner at Due Papaveri (8pm).
Saturday: watch as deer travel through our forest in the early morning. Breakfast (9am). No Saturday is complete without a tour of the food and clothing market at nearby Pavullo. For a small city of 17,000 residents, marvel at the quality and value of the various product offerings. This is when people from the neighbouring countryside and town alike catch up over a coffee or aperitivo and shop for the week. We’ll bring you back to Due Papaveri at 2pm. In the afternoon you’ll participate in a cooking class(4pm) that demonstrates different ways in which Parmigiano-Reggiano and Aceto balsamic can be creatively used. Then in the evening a 4-course dinner (8pm).
Sunday: Rise early (7am) for a tour and tasting at our nearby by gold medal Parmigiano-Reggiano factory, you’ll have breakfast with the dedicated staff. Then back to Due Papaveri for a light lunch. You have the afternoon free to participate in any leisure activities you wish. 4-Course Dinner (7pm) at Due Papaveri and you will receive your cooking course diploma.
Monday: Departure to the Bologna airport after breakfast.
